Market Morning & Momo Mastery
Begin at Asan Market, Kathmandu's ancient spice and produce bazaar, where your instructor teaches you to select the perfect tomatoes, ginger, and Sichuan pepper. Return to a traditional Newari home for a momo-making masterclass — learn the precise pleating technique (at least 12 folds for authentic momos) and the art of balancing the tomato-achar dipping sauce.

Samay Baji & Festival Foods
Learn to prepare samay baji, the sacred Newari platter served at every major life event. Each element — beaten rice (chiura), buffalo meat (choila), black-eyed peas, boiled egg, ginger, and spinach — represents a different blessing. Your host explains the ritual sequence of eating and which foods are offered to which deities. Evening aila distillation demonstration.

Bhaktapur: Juju Dhau & Bara
Travel to Bhaktapur, the city of devotees, to learn its signature dishes. Make juju dhau (king curd) in traditional clay pots, understanding the bacterial culture that gives it its unique sweetness. Learn to fry bara (lentil patties) on a traditional clay stove and prepare aila-marinated choila over an open flame.

Yomari Punhi & Sweet Rituals
On the full moon of Yomari Punhi (or learn the techniques regardless of season), master the art of shaping yomari — the fish-shaped rice-flour dumplings filled with molasses and sesame. Each shape carries a blessing: the two-pointed yomari for wisdom, the rounded one for wealth. Participate in a family puja where the first yomari is offered to the gods.

Patan's Living Kitchen & Farewell Feast
Final day in Patan, where some families still cook in kitchens unchanged for 400 years. Prepare a complete Newari feast from scratch — from grinding spices on a silauto (stone grinder) to fermenting pickles. The farewell dinner is a communal banquet where you serve the dishes you've learned to a gathering of local food enthusiasts.
